This is Aunt Sally's original recipe for Key Lime Pie, from the Curry Mansion Inn in Key West, Florida. It dates back to at least the 1930s, if not earlier.
Ingredients:
- 4 eggs—separate the yolks from the whites
- ½ cup Key lime juice from freshly squeezed limes (approximately 20 needed)
- 14-ounce can of sweetened condensed milk
- 1/3 cup of regular white sugar
- ¼ teaspoon of Cream of Tartar
- An 8-inch graham cracker crust (can be made ahead of time from crushed graham crackers and butter)
Instructions:
Preheat the oven to 350°F.
Beat the egg yolks until they thicken and feel light. Add the lime juice, then condensed milk while stirring until the mixture thickens. Pour it into the pie shell.
Beat the egg whites with the cream of tartar until they stiffen. Gradually add the sugar and keep beating until glossy peaks form. Spread this egg white mixture over surface of the lime filling to the edges of the crust.
Bake in the oven for about twenty minutes until the top is golden brown. Chill for about three hours before serving.
